For a limited time, Pipit will bring its award-winning fine-dining experience to The Brooklet, a luxury retreat nestled in the scenic hinterland of Byron Bay.
This collaboration will transform The Brooklet’s outdoor wood-fired kitchen and poolside bar into an exclusive dining destination, sharing the region’s finest seasonal ingredients and magical sunsets with drinks by the fire.
The intimate open-plan kitchen will seat just 10 guests at a time, during Saturdays and Sundays throughout June and July 2025.
STAY AT THE BROOKLET
Dining is open to all public guests, but you can also stay the weekend to make the most of The Brooklet’s breathtaking views and luxury villas.

Menu
The Brooklet set menu includes 17 parts across in 8 courses, with each course designed to maximise a key seasonal flavour.

(1) Seasonal snacks - Kelp cured tuna | Pipi and bunya nut | Gouda and corn | Patty pan squash | Bay lobster and shiso
(2) Laminated flat bread with macadamia butter and smoked fish roe cream
(3) Roasted mud crab with macadamia tofu and paperbark
(4) Richmond Valley chicken with shio koji turnip | Leg and almond terrine | Smoked savoury custard
(5) Line caught mahi mahi with makrut lime and roasted bone sauce | Smoked skewer
(6) Palate cleanser
(7) Tart tatin with modi apple and strawberry gum

DIETARIES
At The Brooklet, we can adjust for gluten free, pescatarian, dairy-free, shellfish allergy, nut allergy, and pregnancy. Please let us know in advance as late dietaries can not be accommodated on the day
If you require vegetarian, vegan or no-seafood menus, we would love to welcome you at Pipit in Pottsville (Thurs to Mon).
Sitting Times & Groups
Lunch only available on Saturday and Sunday
2 x sittings (12 noon and 3pm)
Strict arrival times apply as all guests will be served courses simultaneously.
Maximum 10 people per sitting

PRE / POST DRINKS
We encourage you to arrive early with The Brooklet Bar available 30mins before your sitting (11:30am/2:30pm) to enjoy the scenic poolside bar
Coffees and drinks are available after dining until 8pm
What to Expect - Service
The Brooklet’s open plan kitchen is designed to let you observe cooking, talk to chefs, and engage about local produce. The exclusive small group size gives a relaxed, interactive and luxurious feeling much like a private chef experience
The small size (max 10 guests) means all guests will be served simultaneously. Therefore strict arrival times apply to avoid missing courses or impacting other guests. The paced dining experience is a 2.5 hour sitting time

Counter Seats
The Brooklet seating is only at an open plan kitchen bench (no tables). There are comfortable padded stools with backs.
If you require accessible tables, we would love to welcome you at Pipit in Pottsville (Thurs to Mon).
Weather
The outdoor kitchen area is covered, shaded and weatherproof for dining and has vertical blinds for wind and rain.
Please bring a jacket if you are mindful of the cold and we do have blankets if required
Byron Bay winter weather is very pleasant at 13-19C in July.
Cancellation Fees ($220pp)
Due to the limited seats, no shows or late cancellations (within 48 hr of arrival times) have a cancellation fee of $220pp (full menu)
Credit card details are required at the time of booking but nothing is charged unless the no show/ late cancellation occurs. We will send an automated booking reminder, as your opportunity to change bookings and avoid this fee.
Service Fees/ Surcharges
10% discretionary service charge applies to large groups (tables of 6+) as a gratuity/tips paid directly to our staff
EFTPOS and credit card processing fees applies. 1.4% for all cards
Kids
The Brooklet is a 16 years old and over venue.
Please dine at Pipit in Pottsville (Thurs to Mon) if you are dining with kids and babies.
Cash-less Payments and Pipit Vouchers
Pipit vouchers can be used at The Brooklet for food
Pipit vouchers can not be transferred to drinks at The Brooklet bar
